Cajun Dried Okra
This is a recipe I made years ago after having some at a antique fair with my sister Barbie. They were gone by the time we got home so I immediately bought a food dehydrator and made my version. They are healthy and addictive… Today I have changed up the recipe to prep the day before and pre cook so it will only take 3-4 hours to dehydrate and get them nice and crispy…. YUMMY! Before it took well over 12 hours to achieve the crispness you will want on these.
Day 1
Start out with cleaning them well in cool water in a colander and allow to dry for an hour or so. Next slice into pieces and put on a paper towel to dry out further. I let mine sit overnight.
Day 2
Put them on a cookie sheet etc. in either your oven or dehydrator making sure there is plenty of space for the air to dry them out good. Sprinkle with creole seasoning and mist with a little olive oil.
Cook at 450 for 10 minutes stir and cook an additional 10 minutes until lightly browned. At this point they will still be chewy.
Continue to dehydrate at about 225 for 3 to 4 hours. Check once an hour until nice and crispy… Enjoy!
