Chicken Divan
Well I have decided to start my blog with the first recipe I had ever made. This recipe is so good that my sister Barbie and I made it once a week until we were completely burnt out on it. Now I make it occasionally so I enjoy each time. This is a word of warning:)
Now on to the recipe. On each recipe I post there will be step by step instructions with pictures and a few videos as needed. At the end will be the written recipe.
First preheat oven to 350.
Cook a few pieces of boneless skinless chicken 3-4 pieces thighs or breasts. I usually just boil mine from frozen, bring to a running boil and turn off the heat and let sit for 20 minutes. Then cool with cold water and chop. Or you can use whatever chicken you have even leftovers. Don’t mind my old pot, I have a new one on the way from Amazon!
While this is cooking prepare your broccoli. I use the frozen chopped broccoli in the bag that can be microwaved so follow the instructions. Make sure when done that you drain off any excess water before adding. You can also either steam or roast fresh broccoli in olive oil and chop up to add to dish.
Now for the sauce… In a small pot add cream of chicken, 1/2 cup mayonnaise, 1/2 tsp sugar, 1 tsp curry and 1 tsp lemon juice. Mix and heat on low until warm.
In a greased casserole layer broccoli, chicken and sauce. Then add 1/2 cup grated cheddar and Italian bread crumbs. I use enough to lightly cover the top.
Bake for about 30 minutes until brown. Once in the oven you can start you rice which should be ready about the same time. I truly hope you enjoy!!!!
Chicken Divan
3-4 pieces Chicken thighs or breasts
1 package frozen broccoli
1 can cream of chicken soup
1/2 tsp sugar
1 tsp curry
1 tsp lemon juice
1/2 c Cheddar Cheese
1/4 c Italian bread crumbs
1 cup rice
Add chicken to large pot of water and bring to a full boil. Turn off heat and let set for 15 minutes if chicken is raw and 20 minutes if it is frozen. You can also use leftover or rotisserie chicken. Chop into to small bite size pieces.
Cook frozen broccoli per instructions and drain any excess water. You can also steam or roast the broccoli with olive oil if you prefer.
In a small pot add cream of chicken soup, mayonnaise, sugar, curry and lemon juice. Mix and heat on low until warm.
In a casserole dish layer broccoli, chicken and then sauce. Add shredded cheese and breadcrumbs.
Bake at 350 for about 30 minutes until brown.
Serve over rice.
