Cilantro Lime Rice with Black Beans

This is my go to recipe when making any type of Mexican food. It is so good and I guess since I don’t really like regular Mexican rice much this is a great option. Plus adding the beans which is optional makes the side all in one pan which makes for less pot and pans to clean:)

In a large skillet heat 1 tbsp oil and chop and saute a small onion for a few minutes. Add 1 tsp garlic and cook for an additional minute.

Add two cups of chicken broth and zest of 1 lime. Bring to a boil then add 1 cup rice. Reduce heat and cover cooking for 20 minutes.

Once rice is done add juice from 1 lime. Taste and if need add juice of another lime. Add drained black beans and heat thru. This part is optional. Taste again and adjust lime juice and add salt if needed. Once you are liking the flavor chop and add 1 bunch of fresh cilantro. Enjoy!

Cilantro Lime Rice with Black Beans

1 Tbsp oil

1 small onion chopped

1 Tsp Garlic/ or 1 clove chopped

2 Cups chicken broth

1 Cup Rice

Zest of 1 lime

Juice of 1 or 2 limes

1 Can Black Beans/Drained and Rinsed

1 Bunch of fresh Cilantro Chopped

Add chicken broth and lime zest. Bring to a boil and then add rice. Reduce heat and cover cooking for 20 minutes.

Once rice is done. Add juice of 1 lime and taste if you would like more lime flavor add juice of another lime. I generally use juice of two limes. Add 1 can drained black beans which is optional. Heat thru. Taste again and adjust salt if needed. Add chopped cilantro and mix. Serve and Enjoy!
