Coffee Marinated Pork Chops

This is another recipe I had forgotten about!!!! Super easy marinade and don’t let the coffee fool you it doesn’t taste anything like coffee once it is grilled;) It really is a different taste for grilled pork chops and I guess you could bake them as well but we like this recipe on the grill.

In a large ziplock bag add 1 cup brewed coffee that has been cooled, 1/2 cup Molasses, 2 tbsp Apple Cider Vinegar, 1 tbsp Dijon Mustard, 2 clove minced garlic, 1/2 tsp ground ginger, 6 to 8 sprigs fresh thyme and salt and pepper; Mix well. Add pork chops and marinate for at least 2 hour in the fridge.

Heat grill to medium-high. Remove the pork from the bag pouring marinade into a saucepan: boil gently over medium -high heat, stirring, until reduced by half. 12 to 15 minutes then remove the thyme sprigs.

Grill the pork chops for 3 to 4 minutes per side to an internal temperature of 145. Rest for 5 minutes; serve with glaze. Enjoy!

Salt and pepper to taste

6-8 sprigs fresh Thyme

4 6-8 oz Bone-in Pork Chops

Combine all ingredients minus the pork chops; Mix well. Add the pork chops and marinade for at least 2 hours.
