Easy Cheater Crawfish Etouffee

I refer to this recipe as cheater since you don’t have to make a roux. You will use golden mushroom soup in place of the roux. It is super easy and really tasty. You won’t even know the difference.

In a large pot melt 1 stick of butter. Add 1 diced onion, 1 diced bell pepper, 4 stalks of diced celery and 2 Tbsp garlic. You can dice whatever size you prefer. I tend to go big on this because I like mine chunky. Saute until the onions are transparent.

Stir in 1 lb crawfish tails and simmer for about 40 minutes.

Add 1 can golden mushroom soup and 5 oz of water then add creole seasoning to taste. Be careful with this step as creole can be really salty and you don’t want to add to much. If you want additional heat without the salty taste you can also add a bit of cayenne pepper. Simmer for an additional 30 minutes.

Add 1/4 cup chopped parsley reserving some for garnish when serving then add 1/4 cup chopped green onions. Cook for 5 minutes. Remove from heat and let cool for 15 minutes. Serve over rice. Enjoy!

1 lbs crawfish tails

1 stick butter

1 large onion diced

1 bell pepper diced

3-4 stalks celery diced

2 tbsp minced garlic

1/4 Cup green onion diced

1/4 cup parsley chopped

1 can golden mushroom soup

creole seasoning of your choose to taste

Melt butter in a large pot. Add onion, bell pepper, celery and garlic. Simmer until onions are transparent.

Stir in Crawfish and simmer for 40 minutes. Add soup, 5 ounces of water and creole to taste. Simmer for 30 minutes. Add parsley and green onion cook an additional 5 minutes. Remove from heat and cool for 15 minutes. Serve over rice. Enjoy!
