Feta Potato Salad

This is my version of a Potato salad I had from a food truck for the first time and had to go home and make it right away. The first time I made it my husband stated he no longer wanted regular potato salad. LOL!!! It’s super easy and tasty!

Cook 5-6 peeled and large diced potatoes until soft. I have tried to show you in pictures the way I do my potatoes since I hate peeling them so I cut off all sides and ends to make a rectangle and then dice the size needed. I don’t mind a little peeling in there but you can just cut this off if you want. This make doing potatoes much quicker!!!

While that is cooking in a large skillet cook 5-6 pieces of thick cut bacon until crispy and drain on paper towels then crumble. Once potatoes are done drain and rinse in cool water. Let drain well. Add to a large bowl and mix in 1/4 Cup Mayonnaise and season with pepper while still warm. Refrigerate to cool. Slice 3-4 greens onion and add to the cooled potatoes along with 4 oz feta cheese and crumbled bacon. Taste and add salt and pepper if needed. YUMMY! Enjoy!

Feta Potato Salad

3-4 pieces of thick sliced bacon

5-6 Large diced potatoes

3-4 Green Onions Sliced

1/4 Cup Mayonaisse

4 oz Crumbled Feta

Cook potatoes until soft and drain and then rinse in cool water. Drain again well. Mix with Mayo and Pepper place in the fridge to cool.

Cook bacon until crispy and then drain on paper towel. Crumble.

Once the potatoes have cooled add green onions, bacon and feta. Add salt and pepper to taste. Enjoy!
