Italian Sausage and Tortellini Soup

This is a quick and easy recipe and this time I used turkey sausage which made it a bit healthier and lighter but the flavor was still incredible.

In a large pot brown off Italian Sausage you can use either regular or as stated above I used turkey sausage since I found it on sale. Drain sausage and set aside. If using turkey be careful not to over cook so it doesn’t dry out.

In the same pot add 1 tbsp Oil and heat. Add 1 dices onion, 4 stalks diced celery and 3 or 4 diced carrots. Saute for about 5 minutes until onion start to get soft. Add about a tablespoon of minced garlic and saute an additional minute.

At this point add 4 cup Chicken broth and 1 Tsp of Italian seasoning. If you have fresh you can use whatever is your favorite. Simmer for about 15 to 20 minutes until carrots get soft. Taste and add seasoning if necessary. Add 2 Diced squash and 1 package of frozen tri-colored tortellini along with 2 cup additional Chicken broth. Simmer until pasta is done about 5 to 10 minutes. If additional Chicken broth is needed you can add as the pasta is absorbing it. Serve with a bit of Italian seasoning and Parmesan Cheese. Enjoy!

Italian Sausage and Tortellini Soup

1 lb Italian Sausage/ You can use whichever type you like. I used Turkey in the pictured.

1 Tbs Oil

1 Onion Diced

4 Stalks Diced Celery

3-4 Diced Carrots

1 Tbsp minced Garlic

6-8 Cups Chicken Broth

1-2 Diced Squash Yellow or Zucchini

1 Tsp Italian Seasoning or to taste

1 Package Tri-Colored Cheese Tortelinni

In a large pot brown Italian sausage and drain. In the same pot add oil and saute onion, celery and carrot until onions are tender about 5 minutes. Add garlic and cook an additional minute.

Add 4 Cups of Chicken broth and Italian seasoning and simmer for 15 to 20 minutes until carrot are tender. Taste and add seasoning as needed.

Add Squash and tortellini along with 2 cup of Chicken broth and cook until pasta is tender 5 to 10 minutes. At this point you may need to add more chicken broth as the pasta will absorb a lot of the liquid. Serve with additional seasoning and Parmesan.
