Shrimp and Orzo Pasta Salad

This is recipe I came up with many years ago and is still my go to when it really hot outside… Sorry, but I guess I am a little late this year:) This all together take about 15 minutes to cook and let it cool in the frig it’s that easy!!!!

Start with a large pot of salted water. Bring to boil, add 8 oz of orzo and 1 lb of shrimp. Cook for 5 minutes until pasta is done and drain well. I used to cook the pasta and shrimp separately but came up with cooking them together when we were camping and it was so hot I just wanted to get it done asap. Finding Orzo pasta in the country is another story all together. Needless to say, most people didn’t know what it was so I ended up with Mexican melon pasta!!!!:)

To the hot pasta and shrimp add 2 tbsp Mayonnaise and Lemon pepper to taste. I use a lot!!! At this point, put it in the fridge to cool while you prep the remaining ingredients.

Dice 1 large tomato or two roma, which is what I use. Slice 2 green onion and chop 1 bunch of cilantro. Add this along with 8 oz of feta. Return to fridge to chill. This is great served with yummy bread. Enjoy!

Shrimp and Orzo Pasta Salad

1 lb Shrimp

8 oz Orzo

8 oz Feta Cheese

1 large Tomato diced or 2 Roma Tomatoes

1 bunch Cilantro chopped

2 Green onions sliced

2 tbsp Mayonnaise

Lemon Pepper to taste

In a large pot bring salted water to boil, add shrimp and orzo. Cook for about 5 minutes until pasta is done. Drain well.

Add to a large bowl, Add mayonnaise and lemon pepper to taste. Place in fridge to cool.

Prep remaining ingredients add to bowl and cool.

Enjoy!
