Shrimp Pontchartrain

This is a recipe that has been one of my easy go to’s during the work week for shrimp. The entire recipe is done in the microwave and can be made in the time it takes to make rice on the stove so it comes together in about 30 minutes:)

This will be served over rice so I would start with boiling the water to make the rice while you put everything together.

In a glass microwave safe casserole dish with a lid. Add 1 lb shrimp fresh or frozen and 1/2 tsp creole seasoning or to your taste. I just sprinkle on top. Cover and cook for 3-5 minutes until shrimp is no longer translucent.

Drain and reserve any liquid that cooks off the shrimp. You will need 1/2 Cup but you made need to add a little water to this. If you are using frozen you will tend to get more stock once cooked in the microwave with fresh I have to add water.

In the same dish melt 1/2 cup butter covered 1 minute. Add 4 green onions sliced and 1 can or 6 fresh mushrooms sliced cook covered 3 minutes. Add 1/4 Cup flour, 1 tsp salt, 1/4 tsp white pepper and 1/4 tsp cayenne pepper. Mix well. Then slowly add 1/2 cup shrimp stock and 1/2 cup half and half or milk. Mix and cook covered 3 1/2 minutes stir and add shrimp then cook additional 3 1/2 minutes. Serve over rice. Done:) Enjoy!

1 can or 6 fresh mushrooms sliced

1/2 cup butter

1/4 cup flour

1/2 cup shrimp stock

1/2 cup half and half or milk

1 tsp salt

1/2 tsp white pepper

1/2 tsp cayenne pepper

1 tsp Creole seasoning

In a glass casserole with lid add shrimp and seasoning with creole. Cook covered for 3 to 5 minutes until shrimp is no longer translucent.

Cook covered 3 1/2 minutes stir and then add shrimp cook additional 3 1/2 minutes. Serve over rice. Done:) Enjoy!
