  • ¼ cup Cilantro chopped
  • ½ cup Cotija Cheese or feta cheese
For the Dressing
  • ½ cup Mayonnaise or Greek yogurt
  • 1 teaspoon Chili Powder adjust to taste
  • 1 teaspoon Smoked Paprika or regular paprika
  • ½ teaspoon Salt to taste
  • 2 tablespoons Lime Juice freshly squeezed

Method
 

Preparation Steps
  1. Preheat the grill to medium-high heat (around 400°F) and ensure grates are clean and lightly greased.
  2. Grill the corn on the cob for about 6 minutes, turning every 2 minutes until golden brown.
  3. Remove the corn from the grill and let it cool before cutting the kernels off into a bowl.
  4. Add diced red bell pepper, sliced jalapeño, chopped red onion, and cilantro to the bowl.
  5. In another bowl, whisk together mayonnaise, chili powder, smoked paprika, salt, and lime juice.
  6. Pour the dressing over the corn and vegetable mixture, and gently fold to combine.
  7. Cover and refrigerate for at least 30 minutes before serving to enhance flavors.
