  • 1 pound chicken breasts can substitute with tofu or shrimp
  • 3 tablespoons soy sauce use tamari for gluten-free
  • 2 tablespoons cornstarch
  • 1 teaspoon black pepper adjust to taste
  • ½ teaspoon salt adjust based on soy sauce's saltiness
For the Vegetables
  • 8 ounces mushrooms any variety works well
  • 1 medium bell pepper use any color or omit
  • 1 medium onion can substitute with green onions
  • 3 cloves garlic freshly minced preferred
  • 1 tablespoon ginger freshly minced preferred
For Cooking
  • 2 tablespoons vegetable oil any neutral oil
  • 1 cup chicken broth use vegetable broth for vegetarian
  • 1 tablespoon sesame oil can be omitted
For Garnish
  • 2 tablespoons green onions chopped

Method
 

Steps
  1. Marinate the chicken by combining pieces with soy sauce, cornstarch, black pepper, and salt. Let it sit for 15 minutes.
  2. Heat vegetable oil in a skillet over medium-high heat. Add marinated chicken and cook for 5-7 minutes until browned.
  3. In the same skillet, sauté minced garlic and ginger for 30 seconds until fragrant.
  4. Add sliced onion, bell pepper, and mushrooms. Stir-fry for 3-4 minutes until vegetables are tender.
  5. Combine cooked chicken with vegetables, add broth and sesame oil, and simmer for 2-3 minutes.
  6. Taste and adjust seasoning as necessary.
  7. Serve hot over rice or noodles, garnished with green onions.
