Preparation
- Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
- In a large mixing bowl, combine 1 cup of cottage cheese with 4 large eggs and whisk until smooth.
- Stir in 1 cup of shredded cheddar cheese, ½ cup of diced bell peppers, ¼ cup of chopped green onions, and season with garlic powder, onion powder, salt, black pepper, and paprika.
- Carefully pour the egg mixture into the greased muffin tin, filling each cup about ¾ full.
- Bake for 20-25 minutes until set in the center and lightly golden on top.
- Let cool for a few minutes, then run a knife around the edges to release the egg bites.
