Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. In a large mixing bowl, combine 1 cup of cottage cheese with 4 large eggs and whisk until smooth.
  3. Stir in 1 cup of shredded cheddar cheese, ½ cup of diced bell peppers, ¼ cup of chopped green onions, and season with garlic powder, onion powder, salt, black pepper, and paprika.
  4. Carefully pour the egg mixture into the greased muffin tin, filling each cup about ¾ full.
  5. Bake for 20-25 minutes until set in the center and lightly golden on top.
  6. Let cool for a few minutes, then run a knife around the edges to release the egg bites.
