Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add the pasta and cook for 8-10 minutes until al dente. Drain and set aside, reserving some pasta water.
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and sauté for 5-7 minutes until translucent.
  3. Stir in minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  4. Add the canned tomatoes, crush slightly, season with salt and pepper, and let simmer for 15-20 minutes until thick.
  5. Toss the cooked pasta with the sauce until evenly coated.
  6. Stir in diced mozzarella cheese and allow it to melt slightly.
  7. Fold in fresh basil leaves and adjust seasoning if needed.
  8. Optionally, transfer to a baking dish, top with Parmesan cheese, and bake at 180°C (350°F) for 15-20 minutes.
  9. Let sit for several minutes, then serve in bowls topped with more basil and a drizzle of olive oil.
