- Prepare the fruits by slicing 3 Honey Crisp apples, 3 Granny Smith apples, 1 lemon, and 1 orange into thin rounds. Remove any seeds and keep the peels on for added flavor.
- In the Instant Pot, gather all sliced fruits and add 4 cups of filtered water, 2 cinnamon sticks, an optional star anise, and 1 teaspoon of pure vanilla extract. Stir gently.
- Secure the Instant Pot lid tightly and set the valve to sealing. Cook the mixture on high pressure for 15 minutes.
- Once the cooking time is up, allow for a natural pressure release for 10 minutes, then carefully switch the valve to venting.
- Strain the cider into a large bowl using cheesecloth to extract as much liquid as possible, leaving behind the fruit solids.
- In the bowl with the strained cider, mix in ½ cup of maple syrup and 1 cup of pumpkin puree, stirring until smooth.
- Pour the cider into mugs and garnish with whipped cream, cinnamon, or caramel drizzle, or chill for a refreshing drink.
