Step-by-Step Instructions
  1. Prepare the fruits by slicing 3 Honey Crisp apples, 3 Granny Smith apples, 1 lemon, and 1 orange into thin rounds. Remove any seeds and keep the peels on for added flavor.
  2. In the Instant Pot, gather all sliced fruits and add 4 cups of filtered water, 2 cinnamon sticks, an optional star anise, and 1 teaspoon of pure vanilla extract. Stir gently.
  3. Secure the Instant Pot lid tightly and set the valve to sealing. Cook the mixture on high pressure for 15 minutes.
  4. Once the cooking time is up, allow for a natural pressure release for 10 minutes, then carefully switch the valve to venting.
  5. Strain the cider into a large bowl using cheesecloth to extract as much liquid as possible, leaving behind the fruit solids.
  6. In the bowl with the strained cider, mix in ½ cup of maple syrup and 1 cup of pumpkin puree, stirring until smooth.
  7. Pour the cider into mugs and garnish with whipped cream, cinnamon, or caramel drizzle, or chill for a refreshing drink.
