Step-by-Step Instructions
  1. Wash the cucumbers and sweet peppers thoroughly under cold running water. Scrub the cucumbers with a vegetable brush and dry them before preparing to slice.
  2. Slice the cucumbers into thin rounds and the sweet peppers into uniform strips, removing their seeds. Also, slice the red onion thinly.
  3. In a small mixing bowl, combine olive oil, apple cider vinegar, lemon juice, and honey. Whisk until smooth.
  4. In a larger bowl, toss together the sliced cucumbers, sweet pepper strips, and red onion, mixing well.
  5. Drizzle the dressing over the vegetables, toss gently to coat without bruising them.
  6. Sprinkle chopped dill over the top and gently mix into the salad.
  7. Refrigerate for at least 15 minutes to let the flavors meld before serving.
