Instructions
  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Wash and dry your zucchini and yellow squash thoroughly, then slice them into ¼-inch rounds.
  3. In a large mixing bowl, toss the sliced zucchini and squash with olive oil until each piece is well-coated.
  4. Sprinkle garlic powder, onion powder, Italian seasoning, salt, and black pepper over the coated vegetables and toss gently.
  5. If using, fold in Parmesan cheese into the mixture now.
  6. Carefully arrange the seasoned vegetables in a single layer in the air fryer basket.
  7. Cook the zucchini and squash in the preheated air fryer for about 10-12 minutes, shaking the basket halfway through.
  8. Once browned, remove from the air fryer and serve immediately.
