- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Wash and dry your zucchini and yellow squash thoroughly, then slice them into ¼-inch rounds.
- In a large mixing bowl, toss the sliced zucchini and squash with olive oil until each piece is well-coated.
- Sprinkle garlic powder, onion powder, Italian seasoning, salt, and black pepper over the coated vegetables and toss gently.
- If using, fold in Parmesan cheese into the mixture now.
- Carefully arrange the seasoned vegetables in a single layer in the air fryer basket.
- Cook the zucchini and squash in the preheated air fryer for about 10-12 minutes, shaking the basket halfway through.
- Once browned, remove from the air fryer and serve immediately.
