Preparation
  1. Begin by chopping chicken into small, bite-sized pieces and season lightly with salt and pepper.
  2. Heat oil in a large skillet, sauté garlic until fragrant for about 30 seconds.
  3. Add seasoned chicken, cooking until golden brown, about 6-8 minutes, reaching 165°F.
  4. Chop bell pepper and green onions; add to the skillet with soy sauce and lime juice. Cook for an additional 2-3 minutes.
  5. Preheat oven to 375°F. Arrange wonton wrappers in muffin tins to form taco shells and bake for about 8 minutes.
  6. Remove shells from the oven, fill with chicken mixture, drizzle with sriracha if desired, and serve warm garnished with lime wedges.
