- Finely chop 2-3 fresh ripe tomatoes and place them in a large mixing bowl. Remove excess seeds and juice.
- Add the chopped red onion and minced garlic cloves to the tomatoes, followed by the grated lemon zest. Mix gently.
- Chop the fresh dill and parsley, then add to the mixture and stir until evenly distributed.
- Sift in the plain flour and baking powder while stirring. Season with salt and black pepper to taste.
- Pour ½ cup of olive oil into a frying pan and heat over medium. Check temperature with a spoonful of batter.
- Carefully drop tablespoonfuls of the batter into the hot oil and fry for about 2-3 minutes per side until golden-brown.
- Remove fritters from oil and drain on paper towels. Serve hot with tzatziki or a salad.
