  • 1 tablespoon Baking Powder For light texture
  • 1 tablespoon Fresh Dill Chopped, or dried dill with adjustments
  • 1 tablespoon Fresh Parsley Chopped
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black Pepper Optional
  • ½ cup Olive Oil For frying

Method
 

Step-by-Step Instructions
  1. Finely chop 2-3 fresh ripe tomatoes and place them in a large mixing bowl. Remove excess seeds and juice.
  2. Add the chopped red onion and minced garlic cloves to the tomatoes, followed by the grated lemon zest. Mix gently.
  3. Chop the fresh dill and parsley, then add to the mixture and stir until evenly distributed.
  4. Sift in the plain flour and baking powder while stirring. Season with salt and black pepper to taste.
  5. Pour ½ cup of olive oil into a frying pan and heat over medium. Check temperature with a spoonful of batter.
  6. Carefully drop tablespoonfuls of the batter into the hot oil and fry for about 2-3 minutes per side until golden-brown.
  7. Remove fritters from oil and drain on paper towels. Serve hot with tzatziki or a salad.
