Method
 

Preparation Steps
  1. Wash and peel the potatoes. Cut them into thick wedges and soak in cold water for 30 minutes.
  2. Combine flour, cornstarch, salt, black pepper, paprika, garlic powder, and onion powder in a bowl.
  3. Drain and dry the potatoes, then dredge them in the coating mixture.
  4. Heat oil to 325°F (163°C) and fry the wedges for 5-6 minutes until tender but not browned.
  5. Increase oil temperature to 375°F (190°C) and fry wedges for another 3-4 minutes until golden brown.
  6. Remove wedges, drain on paper towels, and season with salt while hot before serving.
