Preparation Steps
- Wash and peel the potatoes. Cut them into thick wedges and soak in cold water for 30 minutes.
- Combine flour, cornstarch, salt, black pepper, paprika, garlic powder, and onion powder in a bowl.
- Drain and dry the potatoes, then dredge them in the coating mixture.
- Heat oil to 325°F (163°C) and fry the wedges for 5-6 minutes until tender but not browned.
- Increase oil temperature to 375°F (190°C) and fry wedges for another 3-4 minutes until golden brown.
- Remove wedges, drain on paper towels, and season with salt while hot before serving.
