  • 1 cup Cold Water Adjust for batter consistency
For the Nuoc Cham Sauce
  • 3 tablespoons Fish Sauce Can substitute with soy sauce
  • 2 tablespoons Lime Juice Freshly squeezed
  • 1 tablespoon Sugar Brown sugar for added depth

Preparation Steps
  1. Start by roughly chopping the fresh shrimp into small pieces and place them in a mixing bowl.
  2. Finely chop your favorite fresh herbs and add them to the shrimp. Toss to combine.
  3. In a separate bowl, whisk together all-purpose flour, fish sauce, and a large egg until smooth.
  4. Gradually add cold water to adjust the batter's consistency. Let rest for 10 minutes.
  5. Fold the shrimp and herb mixture into the batter, ensuring each piece is coated.
  6. In a large frying pan, heat vegetable oil over medium-high heat.
  7. Drop spoonfuls of the shrimp batter into the hot oil, frying for 3-4 minutes on each side until golden brown.
  8. Drain on paper towels and allow to cool slightly.
  9. In a bowl, mix fish sauce, lime juice, sugar, and water until sugar dissolves for the dipping sauce.
  10. Serve the fritters hot with the Nuoc Cham sauce for dipping.
