Preparation
  1. Begin by chopping the fresh shrimp into small pieces and mix with chopped fresh herbs.

  3. Gently fold the shrimp and herb mixture into the batter.
  4. Heat oil in a frying pan to 350°F (175°C).
  5. Drop spoonfuls of the batter into the pan and fry until golden brown, about 3-4 minutes per side.
  6. Transfer fritters to a paper towel-lined plate to drain excess oil.
  7. In a bowl, combine fish sauce, lime juice, sugar, and water to make the nuoc cham.
  8. Serve fritters hot with nuoc cham sauce.
