Ingredients
  

For the Meatballs
  • 1 pound Minced Pork Substitute with chicken, turkey, or shrimp if desired.
  • 2 tablespoons Fish Sauce Essential for authentic flavor.
  • 1 tablespoon Sugar Coconut sugar can also be used.
  • 3 cloves Garlic Minced for flavor.
  • 2 stalks Lemongrass Finely chopped.
  • 3 pieces Green Onions Sliced; chives or scallions can be used.
For the Bowls
  • 8 ounces Rice Noodles (Vermicelli) Soaked in hot water.
  • 1 cup Bean Sprouts Crunchy texture; shredded cabbage is a substitute.
  • 1 medium Carrot Julienned.
  • 1 medium Daikon Optional; jicama can be substituted.
For Garnish
  • 1 bunch Cilantro Fresh herbs.
  • 1 medium Lime Cut into wedges.
  • 1 small Chili Adjust heat to preference.
For the Sauce
  • 3 tablespoons Rice Vinegar For acidity.

Method
 

Preparation
  1. Prepare Nuoc Cham Sauce by whisking together fish sauce, sugar, lime juice, rice vinegar, minced garlic, and chopped chili. Set aside.
  2. Soak rice noodles in hot water for 3-5 minutes until just tender. Drain and rinse under cold water.
  3. Combine minced pork, fish sauce, sugar, garlic, lemongrass, and green onions in a mixing bowl; form into small patties.
  4. Heat oil in a skillet and cook patties for about 3 minutes per side until golden brown.
  5. Assemble serving bowls with rice noodles on the bottom, topped with bean sprouts, carrots, daikon, and pork patties.
  6. Garnish with cilantro and mint, and drizzle with Nuoc Cham sauce before serving.
