Ingredients

For the Dough
  • 2 cups Almond Flour Provides structure and a low-carb base; avoid coconut flour for best results.
  • 1 cup Shredded Mozzarella Cheese Adds cheesiness; opt for low-moisture versions for optimal texture.
  • ½ cup Plain Yogurt Contributes moisture; Greek yogurt offers a creamier substitution.
  • 1 large Egg Binds the ingredients; use a flaxseed egg for a vegan option.

Equipment

  • Microwave-safe bowl
  • mixing bowl
  • Rolling pin
  • baking sheet

Method

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. In a microwave-safe bowl, combine shredded mozzarella cheese and plain yogurt. Heat in the microwave in 30-second increments until the cheese melts smoothly (about 1.5 to 2 minutes).
  3. Transfer the melted cheese and yogurt mix to a mixing bowl. Add almond flour and the large egg. Mix until a sticky dough forms.
  4. Dust a clean surface with almond flour and knead the dough for 2-3 minutes until smooth and pliable.
  5. Roll out the dough between two sheets of parchment paper into a circle 10-12 inches in diameter and about ¼ inch thick.
  6. Transfer the dough to a baking sheet and bake for 10-12 minutes or until golden and firm.
  7. Add your favorite toppings and return the pizza to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.
