Ingredients

  • 4 large tortillas soft flour or whole wheat
For the Creamy Filling
  • 8 ounces cream cheese softened
  • 2 tablespoons mayonnaise or Greek yogurt
  • 1 teaspoon garlic powder
  • 1 teaspoon dill
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste
  • 1 cup shredded cheese optional, cheddar or mozzarella
For the Vegetables
  • 1 cup bell peppers sliced and diced
  • 1 cup cucumbers finely diced
  • 1 cup carrots shredded or finely diced

Method
 

Preparation
  1. Soften cream cheese in a mixing bowl for 20-30 seconds in the microwave until spreadable. Mix in mayonnaise, garlic powder, dill, salt, and pepper until smooth.
  2. Warm tortillas by wrapping them in a damp paper towel and microwaving for 15-20 seconds.
  3. Spread a layer of the cream cheese mixture on a warm tortilla, leaving a ½-inch border.
  4. Sprinkle finely diced veggies over the cream cheese layer and add shredded cheese if desired.
  5. Roll the tortilla tightly away from you, keeping the filling intact.
  6. Secure the ends with toothpicks and refrigerate for at least 2 hours.
  7. After chilling, remove toothpicks and slice the roll-ups into 1 to 1.5-inch thick pinwheels.
