Preparation Steps
  1. Preheat your oven to 375°F (190°C) to ensure even cooking.
  2. Heat a skillet over medium heat, add olive oil, and sauté sliced fingerling potatoes for about 6 minutes until golden brown.
  3. In a small pot, boil water, add fresh peas, and blanch for 2 minutes; then transfer to an ice bath.
  4. In the same skillet, sauté sliced fennel for 4-5 minutes until tender and slightly browned.
  5. Stir in chopped scallions and fresh spinach; cover briefly until spinach wilts, about 2 minutes.
  6. Gently mix all sautéed vegetables together for even flavor distribution.
  7. Whisk eggs and milk together in a bowl until fluffy, then pour over sautéed vegetables.
  8. Dollop goat cheese over the mixture, then bake for 10-12 minutes until set and golden.
  9. Allow to cool slightly for 5 minutes, garnish with chives, slice, and serve warm.
