Preparation
- Start by thawing 2 cups of frozen peas; place them in a fine mesh strainer and run cool water over them for about 3-5 minutes until they soften.
- In a spacious mixing bowl, gently combine the thawed peas with 1 cup of diced cheddar cheese, ½ cup of chopped celery, ½ cup of chopped red bell pepper, and ¼ cup of finely chopped red onion.
- In a separate bowl, whisk together ½ cup of mayonnaise, ¼ cup of sour cream, 2 tablespoons of apple cider vinegar, 1 tablespoon of sugar, and a pinch of salt and black pepper.
- Pour the creamy dressing over the mixed salad ingredients in the large bowl, tossing gently with a spatula.
- Cover your salad tightly with plastic wrap and refrigerate for at least 1 hour.
- After chilling, give the salad a gentle stir before transferring it to a lovely serving dish.
