For the Salad
  • 2 cups Frozen Peas Thawed under cool running water
  • 1 cup Diced Cheddar Cheese Substitute with mozzarella or Jack cheese if desired
  • 0.5 cup Chopped Celery Optional to omit
  • 0.5 cup Chopped Red Bell Pepper Can be left out if preferred
  • 0.25 cup Finely Chopped Red Onion Use green onions for a milder flavor
For the Dressing
  • 0.5 cup Mayonnaise Replace half with Greek yogurt for a lighter version
  • 0.25 cup Sour Cream Can be substituted with more mayonnaise or Greek yogurt
  • 2 tablespoons Apple Cider Vinegar Lemon juice can serve as a suitable alternative
  • 1 tablespoon Sugar Adjust to taste
  • Salt Season to taste
  • Black Pepper Season to taste

Method
 

Preparation
  1. Start by thawing 2 cups of frozen peas; place them in a fine mesh strainer and run cool water over them for about 3-5 minutes until they soften.
  2. In a spacious mixing bowl, gently combine the thawed peas with 1 cup of diced cheddar cheese, ½ cup of chopped celery, ½ cup of chopped red bell pepper, and ¼ cup of finely chopped red onion.
  3. In a separate bowl, whisk together ½ cup of mayonnaise, ¼ cup of sour cream, 2 tablespoons of apple cider vinegar, 1 tablespoon of sugar, and a pinch of salt and black pepper.
  4. Pour the creamy dressing over the mixed salad ingredients in the large bowl, tossing gently with a spatula.
  5. Cover your salad tightly with plastic wrap and refrigerate for at least 1 hour.
  6. After chilling, give the salad a gentle stir before transferring it to a lovely serving dish.
