Step-by-Step Instructions
  1. Cook thick-cut bacon in a skillet over medium heat for about 8-10 minutes until crispy. Reserve 2 tablespoons of bacon fat for frying the plantains.
  2. Peel and slice the green plantains into thick rounds. Fry them in the reserved bacon fat for about 5-6 minutes until golden brown and crispy.
  3. In a food processor, combine the fried plantains, crispy bacon, minced garlic, crushed pork rinds, and sofrito. Pulse until it reaches a coarse consistency.
  4. Gradually add warmed broth to the mixture while pulsing, aiming for a stuffing-like consistency. Season with salt and black pepper.
  5. Preheat your oven to 350°F (175°C). Transfer the mixture to a greased baking dish, cover with foil, and bake for 15-20 minutes.
  6. Allow to cool slightly before serving. Garnish with chopped cilantro if desired.
