  • 8 ounces rotini pasta or any short pasta
For the Dressing
  • 1 cup ranch dressing can use light version
  • 2 tablespoons taco seasoning adjust to taste
For the Veggie Medley
  • 1 cup cherry tomatoes halved
  • 1 piece green bell pepper diced
  • 1 piece red bell pepper diced
  • ½ cup red onion chopped
  • 1 can black beans drained and rinsed
  • 1 cup corn canned or frozen
  • cilantro optional, use parsley if preferred
For the Crunch
  • tortilla chips/Doritos or crushed crackers

Method
 

Step-by-Step Instructions
  1. In a small bowl, combine 1 cup of ranch dressing with 2 tablespoons of taco seasoning, mixing until well blended.
  2. Bring a large pot of salted water to a rolling boil, add 8 ounces of rotini pasta, and cook for 8-10 minutes until al dente.
  3. In a large mixing bowl, combine the cooled rotini pasta with the dressing and toss gently.
  4. Chop and add 1 cup of halved cherry tomatoes, 1 diced green bell pepper, 1 diced red bell pepper, ½ cup of chopped red onion, 1 can of black beans, and 1 cup of corn.
  5. Cover the bowl and refrigerate for at least 30 minutes.
  6. Before serving, garnish with chopped cilantro and add crushed tortilla chips or Doritos.
