Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (162°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine mixed nuts, dried coconut (if using), dried cranberries, pepitas, chia seeds, and sea salt. Stir thoroughly.
  3. In a separate bowl, whisk together the maple syrup and vanilla extract until well blended.
  4. Pour the wet ingredients over the dry mixture and mix until combined. Transfer to the baking pan, pressing firmly.
  5. Bake for 30-35 minutes until edges are golden brown. Let cool in the pan for one hour.
  6. Lift out using parchment paper and slice into 12 bars.
