- In a small bowl, dissolve 2 teaspoons of instant yeast in 1 cup of warm milk with a pinch of sugar. Let sit for 10 minutes until bubbly.
- Combine 4 cups of flour, ¼ cup of sugar, and 1 teaspoon of salt in a bowl. Add the yeast mixture, ½ cup of mashed ube, 1 large egg, and ¼ cup of melted butter and mix until a soft dough forms.
- Knead the dough for 8-10 minutes until smooth and elastic. Shape into a ball and place in a greased bowl; cover and let rise for 1 hour.
- Prepare filling by mixing ½ cup cream cheese, ½ cup shredded cheddar, and 1 tablespoon powdered sugar in a bowl until smooth.
- Once risen, punch the dough down, divide it into 12 equal pieces, flatten, fill, and seal tightly.
- Roll each filled ball in breadcrumbs and place seam-side down on a lined baking sheet.
- Cover the rolls and let rise for another 30 minutes.
- Preheat oven to 350°F (175°C) and bake for 18-20 minutes until golden brown.
- Brush with melted butter after baking and allow to cool on a wire rack before serving.
