Method

Step-by-Step Instructions for Homemade Pesto Pasta
  1. Start by blending 2 cups of fresh basil, 2 cloves of garlic, and ½ cup of pine nuts in a food processor. Pulse these ingredients for about 30 seconds until they're finely chopped and aromatic. Gradually pour in ¾ cup of extra virgin olive oil while the processor is running, creating a smooth, vibrant green paste. Finally, fold in ½ cup of grated Parmesan cheese, and season with salt and pepper to taste.
  2. Bring a large pot of salted water to a rolling boil over high heat. Once boiling, add 12 ounces of your preferred pasta, stirring occasionally for 8-12 minutes, or until al dente. Reserve about ½ cup of the pasta cooking water for later, then drain the pasta in a colander, briefly rinsing under cold water to stop the cooking process.
  3. Return the drained pasta to the pot and add in your freshly made pesto. Toss the pasta gently over low heat for about 1-2 minutes, allowing the pesto to evenly coat every noodle. If the mixture seems too thick, gradually stir in a little reserved pasta water until it reaches your desired consistency.
  4. To elevate your Homemade Pesto Pasta further, incorporate any add-ins like halved cherry tomatoes or grilled chicken/shrimp. Toss everything together for another minute to warm through, ensuring flavors meld beautifully.
  5. Once well combined, serve your Homemade Pesto Pasta immediately in warm bowls. Garnish with additional Parmesan cheese and a drizzle of olive oil.
