Make the Pasta Dough
- In a large mixing bowl, combine 2 cups of all-purpose flour with a pinch of salt. Create a well in the center and crack in 2 large eggs. Using a fork, gradually incorporate the flour into the eggs until a shaggy dough forms. Knead the dough on a lightly floured surface for about 8-10 minutes, or until smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
Prepare the Sauce
- While the pasta dough rests, heat a generous drizzle of olive oil in a large skillet over medium heat. Add 3 minced garlic cloves and sauté for about 1 minute until fragrant but not browned. Next, chop 4 ripe tomatoes and add them to the skillet. Cook for 8-10 minutes, stirring occasionally, until the tomatoes burst and form a wonderfully saucy mixture. Season with salt and freshly ground black pepper to taste.
Roll Out the Dough
- After the dough has rested, cut it into quarters for easier handling. Take one piece at a time and flatten it slightly with your hands. Using a rolling pin or a pasta machine, roll the dough into thin sheets, about 1/16 inch thick. Dust the sheets lightly with flour to prevent sticking, and repeat with the remaining pieces.
Cut the Pasta
- Once your sheets are rolled out, it’s time to cut your pasta into your desired shape. For fettuccine, roll the sheet loosely and slice it into ¼-inch strips. Unroll the strips and dust them lightly with flour to keep them from clumping.
Cook the Pasta
- When the water reaches a rolling boil, add a generous pinch of salt. Carefully add your freshly cut pasta and cook for 2-3 minutes, stirring gently to prevent sticking. The pasta is ready when it floats to the top and has a tender bite. Once cooked, reserve a cup of pasta water and then drain the rest in a colander.
Combine and Serve
- Return the drained pasta to the skillet with the simmering Tomato Basil sauce. Toss everything together, adding reserved pasta water a little at a time to loosen the sauce if necessary.
