- Preheat your oven to 425°F (220°C). Gather your baking dish and prepare all your ingredients.
- In a large mixing bowl, combine garlic powder, smoked paprika, dried oregano, cumin, sea salt, and freshly milled pepper with olive oil. Stir until well blended.
- Add the chicken breast, sliced onion, and chopped zucchini to the marinade. Toss gently to coat. Marinate for at least 15 minutes, up to 24 hours in the refrigerator.
- Transfer the marinated chicken and vegetables into a baking dish. Spread them out evenly. Bake uncovered for about 30 minutes, until chicken internal temperature is 165°F (74°C).
- Remove from the oven and let it sit for a few minutes before serving. Enjoy with quinoa or rice.
