  • 2 medium Zucchini Bell peppers or eggplant work well too.
For the Marinade
  • 3 tablespoons Extra Virgin Olive Oil Feel free to use avocado or vegetable oil.
  • 1 teaspoon Garlic Powder Switch with fresh minced garlic for a stronger taste.
  • 1 teaspoon Smoked Paprika Regular paprika can be used for less heat.
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Cumin
  • 1 teaspoon Sea Salt
  • ½ teaspoon Freshly Milled Pepper

Cooking Instructions
  1. Preheat your oven to 425°F (220°C). Gather your baking dish and prepare all your ingredients.
  2. In a large mixing bowl, combine garlic powder, smoked paprika, dried oregano, cumin, sea salt, and freshly milled pepper with olive oil. Stir until well blended.
  3. Add the chicken breast, sliced onion, and chopped zucchini to the marinade. Toss gently to coat. Marinate for at least 15 minutes, up to 24 hours in the refrigerator.
  4. Transfer the marinated chicken and vegetables into a baking dish. Spread them out evenly. Bake uncovered for about 30 minutes, until chicken internal temperature is 165°F (74°C).
  5. Remove from the oven and let it sit for a few minutes before serving. Enjoy with quinoa or rice.
