  1. Start by cutting the beef into 1-inch cubes, ensuring uniform pieces for even cooking. Measure out your spices, tomato paste, and vinegar.
  2. In a small bowl, combine the vinegar, red chili powder, cumin, coriander, and tomato paste. Whisk until you achieve a smooth, thick paste.
  3. Heat a couple of tablespoons of vegetable oil in a heavy-bottomed pot over medium-high heat. Add the beef cubes in batches and sear for about 4-5 minutes until browned.
  4. Lower the heat to medium and add the spice paste to the pot with the seared beef. Stir continuously for 3-4 minutes, letting the spices become fragrant.
  5. Pour in enough water to cover the beef and stir well. Bring to a gentle boil, then reduce heat to low and cover the pot. Let it simmer for about 1 hour and 15 minutes.
