Instructions
  1. In a medium bowl, combine diced cherry tomatoes, finely chopped fresh basil, minced red onion, and minced garlic. Drizzle with balsamic vinegar and olive oil, then sprinkle in salt and black pepper to taste. Stir gently to mix all ingredients together. Allow the mixture to sit for about 10 minutes.
  2. In a separate bowl, beat 8 ounces of softened cream cheese with a hand mixer or a spatula until it is smooth and fluffy. This will take about 2-3 minutes using a mixer or a bit longer by hand.
  3. Stir in 1 cup of shredded mozzarella cheese and ½ cup of grated Parmesan cheese into the whipped cream cheese until fully combined. Mix gently until the cheeses are evenly distributed.
  4. Spread the creamy cheese mixture thickly across the bottom of a serving dish, creating an even layer.
  5. Scoop the tomato mixture from the bowl and spread it generously on top of the cream cheese layer, ensuring the tomatoes are evenly distributed.
  6. Serve the Bruschetta Dip right away with toasted baguette slices, crunchy crackers, or fresh vegetable sticks.
