Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and coat baking sheets with cooking spray.
  2. Slice cauliflower into thick, ¾-inch steaks and arrange on baking sheets.
  3. Drizzle steaks with avocado oil, then add salt, pepper, and Italian seasonings.
  4. Roast cauliflower for 20-25 minutes, flipping halfway for even browning.
  5. Prepare mushroom mixture by slicing mushrooms and mincing garlic; mix in a bowl.
  6. Cook mushroom-garlic mixture in the oven during the last 10-15 minutes of roasting.
  7. Top roasted cauliflower with mushroom mixture and sprinkle with mozzarella cheese.
  8. Bake for an additional 2-3 minutes until cheese melts and is bubbly.
  9. Garnish with fresh thyme and serve warm.
