  • 1 cup chopped nuts
  • ½ cup shredded coconut
  • ¼ cup mini chocolate chips optional

Preparation Steps
  1. Drain the crushed pineapple in a fine mesh sieve to remove excess liquid.
  2. In a large mixing bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy.
  3. Fold in the drained crushed pineapple, shredded coconut, and chopped nuts into the cream cheese mixture.
  4. Scoop out small portions and roll into bite-sized balls, placing them on a parchment-lined baking sheet.
  5. In a separate bowl, combine chopped nuts, shredded coconut, and mini chocolate chips for the coating.
  6. Roll each ball in the coating mixture until fully covered.
  7. Chill the tray in the refrigerator for at least 2 hours to firm up the balls.
  8. Arrange on a platter with optional garnish before serving.
