Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. In a bowl, combine the halved cherry tomatoes, olive oil, minced garlic, salt, black pepper, and red pepper flakes.
  3. Spread the mixture onto the baking sheet and roast for 20-25 minutes until soft and caramelized.
  4. Boil salted water in a pot, add pasta, and cook until al dente for about 8-10 minutes. Reserve ½ cup pasta water.
  5. Combine roasted tomatoes with drained pasta and mix in reserved pasta water gradually.
  6. Stir in fresh basil, Parmesan cheese, and balsamic vinegar, mixing well.
  7. Serve immediately, garnished with extra basil and Parmesan.
