Method
 

Step‑by‑Step Instructions
  1. Crack 2 fresh eggs into a mixing bowl. Add a pinch of salt and pepper, then beat vigorously with a fork for about 30 seconds.
  2. Place a non-stick frying pan on the stovetop over medium heat for 1 minute. Add 1 tablespoon of butter and swirl to melt.
  3. Pour the beaten eggs into the hot pan, gently swirling to ensure even coverage. Cook for 2-3 minutes until edges set.
  4. Add spoonfuls of cream cheese and pieces of smoked salmon onto one half of the omelet. Cook for an additional 30 seconds.
  5. Gently fold the other half of the omelet over the fillings using a spatula. Cook for another minute to develop color.
  6. Carefully slide the omelet onto a plate and sprinkle with freshly chopped chives. Serve immediately.
