Ingredients
  

For the Dough
  • ½ cup warm water activates the yeast
  • ½ cup warm milk can be non-dairy
  • ¼ cup sugar plus 1 tablespoon for yeast
  • 2 ¼ teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 2 large eggs or flaxseed meal for vegan
  • ¼ cup unsalted butter softened
  • Vegetable or Corn Oil for frying high smoke point oil
For the Glaze
  • 1 cup brown sugar
  • ¼ cup milk can be non-dairy
  • ¼ cup corn syrup honey can be substituted
  • 1 teaspoon maple extract
  • 2 cups powdered sugar

Method
 

Preparation
  1. In a small bowl, combine warm water, warm milk, and sugar. Stir gently and sprinkle active dry yeast on top. Let it sit for about 10 minutes until frothy.
  2. In a stand mixer bowl, combine flour, salt, and sugar. Mix on low, add the frothy yeast mixture and eggs. Gradually mix until well combined, then slowly incorporate softened butter.
  3. Knead the dough gently on a floured surface for about 2-3 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm area for about 1 hour.
  4. Punch down the dough, reshape, cover again, and let rest for another hour.
  5. Roll the dough out to a rectangle and cut into 12 equal bars. Place them on a parchment-lined baking sheet and let rise for an additional 30 minutes.
  6. Heat oil to 360-375°F. Fry bars for 2-3 minutes on each side until golden brown. Drain on paper towels.
  7. Melt butter in a saucepan, add brown sugar and milk, whisk until smooth. Stir in corn syrup, maple extract, and powdered sugar until glossy.
  8. Dip each fried bar in the glaze and let sit on a wire rack to set.
