  • 2 tablespoons Olive oil Can be replaced with coconut oil.

For the Aromatics
  • 1 medium Onion Use red or yellow onion.
  • 3 cloves Garlic Fresh minced is best.

For the Rice
  • 1.5 cups Long-grain basmati rice Jasmine rice is a good substitute.
  • 3 cups Chicken broth Vegetable broth works for vegetarian.
For the Spice Mix
  • 1 teaspoon Turmeric A pinch goes a long way.
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Paprika
  • 1 teaspoon Cinnamon
  • to taste Salt & black pepper Adjust salt for lower sodium.
For the Finish
  • 1 cup Frozen peas Can replace with preferred veggies.
  • to taste Cilantro & slivered almonds Omit nuts for nut-free option.

Method
 

Step-by-Step Instructions
  1. Pat the chicken thighs dry and rub with the spice blend. Let marinate for 5 to 10 minutes.
  2. Heat olive oil and butter in a skillet. Sear the chicken for 4-5 minutes on each side.
  3. Sauté onion in the same skillet until soft, then add garlic and ginger.
  4. Toast the rice in the skillet with aromatics for 2-3 minutes.
  5. Add chicken broth and seared chicken, cover and simmer for 25 minutes.
  6. Add peas, cover for another 5 minutes, then fluff rice and garnish.
