  3. Pat dry steelhead trout fillets and brush with olive oil. Season generously with salt and pepper.
  4. Place trout skin-side down on the grill, close the lid, and grill for 4-5 minutes.
  5. Gently flip the trout fillets and grill for an additional 3-4 minutes until the fish flakes easily.
  6. In the last minute of grilling, scoop herb butter onto each fillet to melt and infuse flavors.
