- Combine softened unsalted butter with parsley, dill, chives, and garlic in a bowl until smooth.
- Pat dry steelhead trout fillets and brush with olive oil. Season generously with salt and pepper.
- Place trout skin-side down on the grill, close the lid, and grill for 4-5 minutes.
- Gently flip the trout fillets and grill for an additional 3-4 minutes until the fish flakes easily.
- In the last minute of grilling, scoop herb butter onto each fillet to melt and infuse flavors.
- Remove trout from the grill, drizzle with lemon juice, serve immediately with lemon wedges.
