- In a large mixing bowl, combine chia seeds and coconut milk, stirring gently. Let rest for about 10 minutes until thickened.
- Incorporate lime juice and your choice of honey or maple syrup into the chia mixture. Blend thoroughly for 1-2 minutes.
- Gently fold in shredded coconut to distribute evenly. Mix for about 30 seconds without overmixing.
- Line an 8x8 inch baking dish with parchment paper and pour the mixture in, smoothing the top. Refrigerate for at least 4 hours.
- Once set, lift the mixture out using parchment paper, slice into bars, and serve chilled, optionally garnished with lime zest.
