  • 1 can Coconut Milk full-fat recommended
  • ¼ cup Lime Juice fresh and zesty
  • ¼ cup Honey or Maple Syrup adds natural sweetness

  • ½ cup Shredded Coconut unsweetened, toasted if desired
  • 1 teaspoon Vanilla Extract use pure extract

Preparation Steps
  1. In a large mixing bowl, combine chia seeds and coconut milk, stirring gently. Let rest for about 10 minutes until thickened.
  2. Incorporate lime juice and your choice of honey or maple syrup into the chia mixture. Blend thoroughly for 1-2 minutes.
  3. Gently fold in shredded coconut to distribute evenly. Mix for about 30 seconds without overmixing.
  4. Line an 8x8 inch baking dish with parchment paper and pour the mixture in, smoothing the top. Refrigerate for at least 4 hours.
  5. Once set, lift the mixture out using parchment paper, slice into bars, and serve chilled, optionally garnished with lime zest.
