- In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for about 3-4 minutes until translucent.
- Stir in minced garlic and cook for an additional minute. Increase heat to medium-high and add ground beef. Brown for 5-7 minutes.
- Lower the heat and add chili powder, cumin, paprika, and salt & pepper. Mix well and cook for another 2 minutes.
- In a small bowl, combine chopped tomato, diced onion, minced jalapeño, cilantro, lime juice, and salt to create the salsa.
- Lay out a large flour tortilla and add a scoop of the beef mixture, followed by rice, black beans, cheese, lettuce, diced tomatoes, and avocado.
- Fold in the sides of the tortilla and roll tightly. Optionally crisp in the skillet for 2-3 minutes on each side.
- Serve with homemade salsa on the side and enjoy your Beefy Burritos!
