For the Beef Mixture
  • 1 pound Ground Beef substitute with ground turkey or lentils for a lighter option
  • 1 tablespoon Olive Oil for sautéing the vegetables
  • 1 medium Onion diced; shallots can be used for a milder flavor
  • 2 cloves Garlic minced
  • 2 teaspoons Chili Powder adjust according to your spice preference
  • 1 teaspoon Cumin adds earthy notes
  • 1 teaspoon Paprika for color and mild flavor
  • Salt & Pepper to taste
For the Burrito Wrap
  • 4 large Flour Tortillas larger sizes hold more fillings
  • 1 cup Shredded Cheddar Cheese or Monterey Jack as an alternative
  • 1 cup Cooked Rice can be swapped with quinoa or omitted
  • 1 can Canned Black Beans rinsed before using
  • 1 cup Lettuce or spinach as an alternative
  • 1 medium Tomato diced; cherry tomatoes can be used for sweetness
  • 1 medium Avocado sliced
For the Homemade Salsa
  • 1 medium Tomato chopped
  • 1 small Onion finely diced; red onion can be used for sweetness
  • 1 medium Jalapeño minced; adjust to taste
  • 1 cup Cilantro chopped; optional
  • 1 tablespoon Lime Juice freshly squeezed
  • Salt to taste

Method
 

Step‑by‑Step Instructions
  1. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for about 3-4 minutes until translucent.
  2. Stir in minced garlic and cook for an additional minute. Increase heat to medium-high and add ground beef. Brown for 5-7 minutes.
  3. Lower the heat and add chili powder, cumin, paprika, and salt & pepper. Mix well and cook for another 2 minutes.
  4. In a small bowl, combine chopped tomato, diced onion, minced jalapeño, cilantro, lime juice, and salt to create the salsa.
  5. Lay out a large flour tortilla and add a scoop of the beef mixture, followed by rice, black beans, cheese, lettuce, diced tomatoes, and avocado.
  6. Fold in the sides of the tortilla and roll tightly. Optionally crisp in the skillet for 2-3 minutes on each side.
  7. Serve with homemade salsa on the side and enjoy your Beefy Burritos!
