Ingredients
  

For the Casserole
  • 3 cups Cooked chicken shredded or diced; preferably leftover rotisserie
  • 2 cans White beans canned
  • 1 can Cream of chicken soup
  • 8 oz Cream cheese softened
  • 1 can Green chilies diced
  • 1 cup Chicken broth or vegetable broth
  • 1 cup Corn canned or frozen
For the Topping
  • 3 cups Fritos
  • 2 cups Shredded cheese cheddar or Monterey Jack
  • 1 bunch Green onions sliced

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat oil over medium-high heat and sauté the chicken for 5-7 minutes until golden brown.
  3. Add diced onion and minced garlic, and sauté for 3-5 minutes until translucent.
  4. Stir in ground cumin and taco seasoning, then add chicken broth, salsa verde, green chilies, and white beans. Simmer for 5-10 minutes.
  5. Remove from heat and fold in sour cream. Season with salt and pepper.
  6. Transfer mixture to a greased baking dish, top with Fritos and cheese.
  7. Bake for 15-20 minutes until the cheese is melted and bubbly.
