Ingredients

For the Puree
  • 2 cups Apples Use slightly underripe varieties for better pectin.
  • 1 cup Berries Use fresh or thawed frozen berries, draining excess moisture.
  • 1 cup Zucchini Can be swapped with carrots for added sweetness.
  • 1 cup Carrot May be replaced with more zucchini if desired.
  • ½ cup Coconut Cream Optional; can be replaced with applesauce for increased moisture.

Equipment

  • blender
  • Dehydrator
  • Baking Sheets
  • Parchment Paper

Method

Step-by-Step Instructions
  1. Begin by washing, peeling, and chopping your apples, berries, and chosen vegetables like zucchini or carrots. Place them in a blender and blend on high for 2-3 minutes until the mixture is smooth and free of lumps.
  2. If you’re opting for a creamier texture, add the coconut cream to the blended fruit mixture. Blend again for about 1 minute.
  3. Line your dehydrator trays or baking sheets with parchment paper. Pour the fruit mixture onto the trays and use a spatula to spread it evenly to about ¼ inch thickness.
  4. Set your dehydrator to 135°F (57°C) and allow it to dry for 6-9 hours, or preheat your oven to about 170°F (77°C) and place the trays inside.
  5. Once dehydrated, remove the trays from the dehydrator or oven. Allow the fruit leather to cool completely on the sheets for about 30 minutes.
  6. Transfer the cut pieces of the fruit leather into an airtight container or wrap them in parchment paper to keep them fresh.
