Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grab a 9x13-inch baking dish. Lightly coat the dish with cooking spray.
  2. In a large skillet over medium heat, add diced thick-cut bacon. Cook for about 5–7 minutes until crispy.
  3. Add a splash of vegetable oil to the skillet containing the reserved bacon fat and heat. Sear the chicken for 2–3 minutes on each side.
  4. Transfer the seared chicken to your prepared baking dish. Combine softened cream cheese, garlic powder, dill, and chives in a bowl and spread over the chicken.
  5. Sprinkle half of the crispy bacon over the cream cheese mixture and cover generously with shredded cheddar cheese.
  6. Bake for about 15 minutes until the cheese is bubbly and the chicken reaches 165°F (74°C).
  7. Allow to rest for a few minutes, garnish with the remaining bacon, parsley, and scallions, and serve.
