- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray or butter.
- In a large skillet over medium heat, cook the sausage until browned, about 5-7 minutes. Drain excess fat and set aside.
- In the same skillet, add olive oil or butter and sauté onions and bell peppers for 3-4 minutes. Then, add mushrooms and spinach, cooking for an additional 2-3 minutes.
- In a separate bowl, whisk together eggs, milk, salt, and pepper. Incorporate half of the cheddar cheese.
- Gently fold the cooked sausage and sautéed vegetables into the egg mixture.
- Pour the combined mixture into the greased baking dish and top with the remaining cheddar cheese.
- Bake for 35-40 minutes or until the center is set and a knife comes out clean.
- Let the egg bake rest for 5-10 minutes before slicing and serving.
