- Preheat your oven to 350°F (175°C) and grease a 9x5 inch bread pan.
- Grate the zucchini and squeeze out excess moisture using a paper towel.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, combine the milk and vinegar, then whisk in melted butter and egg.
- Pour the wet mixture into the dry ingredients and fold together until just combined.
- Fold in the drained zucchini, cheddar cheese, and chopped green onions evenly.
- Transfer the batter to the greased bread pan, smoothing the top.
- Bake in the preheated oven for about 1 hour, or until the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack for 30 more minutes before slicing.
