- Cook bacon strips for 5-7 minutes until crispy and golden brown, reserving 2 tablespoons of bacon grease.
- In a bowl, combine mayonnaise, bacon grease, Dijon mustard, Worcestershire sauce, salt, and pepper to create baconnaise sauce.
- Divide ground beef into four balls, season with salt, pepper, smoked paprika, garlic powder, and onion powder.
- Smash beef balls into patties and cook for 2-3 minutes on each side, adding cheese in the last minute if desired.
- Toast hamburger buns cut-side down on the skillet or grill for 1-2 minutes until golden brown.
- Assemble the burgers by spreading baconnaise on the bottom bun, topping with patties, bacon, lettuce, tomato, and pickles.
