  • 1 pound Ground Beef (80/20 blend)
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Smoked Paprika substitute with regular paprika if desired
  • 1 teaspoon Garlic Powder use fresh garlic for more flavor
  • 1 teaspoon Onion Powder can use finely diced fresh onions
For the Bacon
  • 8 slices Bacon choose your favorite variety
For the Baconnaise Sauce
  • ½ cup Mayonnaise or Greek yogurt for a lighter option
  • 2 tablespoons Bacon Grease reserved after cooking bacon
  • 1 tablespoon Dijon Mustard or yellow mustard as a substitute
  • 1 teaspoon Worcestershire Sauce consider soy sauce as an alternative
For Assembly
  • 4 pieces Hamburger Buns brioche or whole grain recommended
  • to taste Lettuce fresh toppings
  • to taste Tomato fresh toppings
  • to taste Pickles fresh toppings
  • to taste Cheese cheddar or pepper jack suggested

Method
 

Cooking Instructions
  1. Preheat your skillet or grill to medium-high heat, around 400°F (200°C).
  2. Cook bacon strips for 5-7 minutes until crispy and golden brown, reserving 2 tablespoons of bacon grease.
  3. In a bowl, combine mayonnaise, bacon grease, Dijon mustard, Worcestershire sauce, salt, and pepper to create baconnaise sauce.
  4. Divide ground beef into four balls, season with salt, pepper, smoked paprika, garlic powder, and onion powder.
  5. Smash beef balls into patties and cook for 2-3 minutes on each side, adding cheese in the last minute if desired.
  6. Toast hamburger buns cut-side down on the skillet or grill for 1-2 minutes until golden brown.
  7. Assemble the burgers by spreading baconnaise on the bottom bun, topping with patties, bacon, lettuce, tomato, and pickles.
  8. Serve immediately with your favorite sides.
